1) Read the chapter on Food Safety (Ch. 17) in our Textbook.

2) Take the Food Safety quiz (ch. 17) on BB. This is one of the required quizzes.

3) Read through some of the articles about outbreaks and recalls on the US FDA website (link, just below). Information from this website may offer an additional reference for your essay.

4) Prepare a Nutrition Reflection Essay, about 800 words in length that relates the lessons you have learned about food safety from all of this reading. Your essay is a synthesis of these areas of questioning:

SCIENCE: What patterns am I observing? Types of foods (and food behaviors) that pose risks? What evidence do I see? Consider adding knowledge you have gained in other classes or personal experiences.
PERSONAL REFLECTION: What have I learned? How will I change my behavior as a result of this learning? Do mention what has been most surprising, most frightening and most encouraging.
MY ROLE IN THE COMMUNITY: How can I help? What should I do to make a difference? Policy changes, communication with others about risk? What difference can I make?

5) This essay must employ at least three references. Your text can be one of the three. Be sure to cite your sources. Use MLA or APA style as suits your major. The library has support materials for these citations, but it’s easiest to use the references tool in the Microsoft Word program.
